Mini Sausage Pancake Muffins

Ingredients

  • I pound ground breakfast sausage
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 baking soda
  • 1 tablespoon sugar
  • 1 egg
  • 1 cup milk
  • 1 tablespoon butter

Instructions

 

  1. Preheat the oven to 400
  2. Cook sausage. Drain fat and set aside
  3. Shift together flour, baking powder, baking soda, and sugar. Mix wet and dry ingredients in a separate bowl
  4. Pour pancake mix into mini muffin pan then add a spoon full of cooked sausage on top
  5. Serve with maple syrup

The recipe was not always very clear. It did not write out all of the steps that needed to be done, so we had figure when to do it by ourselves. The recipe was easy to make overall. It was simple to mix all of the ingredients. I would suggest cooking the sausage ahead of time. If this is not possible, I would suggest having another person make the sausage as you mix the batter together. This recipe will not take very long. Cooking the sausage will take the most time. Mixing the batterĀ together was straight forward and not time consuming. This is an easy and simple thing to make for breakfasts on the go. These would be good to freeze and heat upĀ in the morning for a quick breakfast. The muffins turned out great. They tasted very good. The muffins came out the tin pretty well. The only problem with the final product was that some of the sausage fell off the top of the muffins. We made

these muffins to replace some of the processed breakfast foods. This is a good alternative for some of the more sugary breakfast foods.

  2. They were terrific! You gave a lot of good information about the process and why they are a good breakfast choice. The pan is tough to wash, even when they have been well greased before baking.
